Orlando answered the call to the family business by working at the historic "Freeman & Harris Cafe" with his grandfather, Arthur "scrap" Chapman and father, Willie "Brother" Chapman. He later moved to work in "Pete Harris Cafe".
In 2004, Chef Orlando started his own business by opening his first restaurant named "Brother's Seafood" in honor of his father.
In 2009, he opened his second restaurant on Monkhouse Drive, called "Brother's Seafood To Go".
In 2012, he opened his third restaurant in Bossier City named, "Brother’s at Villaggio".
